1 pound scallops
1/4 cup tamari
2 tbsp sesame oil
2 tsp diced jalapenos
1/2 cup chopped mint
2 cups orange juice
3 tbsp Royal Asia® Thai Sweet Chili Sauce
Method: Marinate 1 pound of scallops with tamari, sesame oil, diced jalapenos and half cup chopped mint. Reduce 2 cups orange juice to a quarter of its volume. Remove from heat and add 1 teaspoon concentrate. Cool, mix half pound butter with orange mixture and add 3 tablespoons Thai Sweet Chili Sauce. Drain and cook scallops. Remove
from pan. Melt 2 tablespoons butter in pan and
pour over scallops.
